Orzo Pasta Salad
Orzo pasta, cooked, mixed with 1.5 cups of chopped cucumber, 1/2 red onion, 1 cup of cherry tomatoes, 1 cup of chickpeas, and 1/2 cup of feta. Toss with 1/3 cup olive oil, juice of 1/2 lemon, 1 tbsp red wine vinegar, and 1 tsp dijon mustard.

Farfalle pasta, cooked, mixed with tomato basil sauce, 1/2 cup of chopped mushrooms, 1 cup of spinach, and 1 sliced Italian sausage.
(I like to add in 2 cups of spinach if I haven't had enough vegetables that day)
1/2 spinach, 1/2 arugula. Tossed with a red wine vinaigrette (1/2 cup olive oil, 1/4 cup red wine vinegar, 2 tsp dijon mustard, 1 tsp honey, salt and pepper to taste). 1/2 cup chopped cucumbers, 1/2 cup thinly sliced red onions, 1/2 cup chopped cherry tomatoes, 1/4 cup of craisins, 1/4 cup sliced almonds, and protein of your choice.
2 slices of bread of your choice. Smash together 2 hard-boiled eggs and one ripe avocado. Season with everything but the bagel seasoning. Spread on toast.
1 cup cooked rice. 1 salmon filet baked in tinfoil with soy sauce, lemon juice, and everything but the bagel seasoning. Cook 1/2 cup bok choy and add to bowl.
1 cup arborio rice, 1 cup white wine, 3 cups vegetable broth, 1 thinly diced white onion, 1 cup shrimp, and 3/4 cup peas. Cook onion in pot until clear, add rice and cook for 1 minute. Add white wine. Add 1 cup broth once white wine is cooked off. Continue to add broth as it cooks off. Add cooked shrimp and peas at the end. Serve with parmesan cheese.
